Use only well grown healthy olives, obtained
by young trees planted in well drained, parasite free olive
groves |

Use olives picked at the optimum ripening
stage as this is the time when their fragrance is at their
best. Discard over ripe olives. |

In the presence of a favourable climate, in those regions
naturally suited to olive growing. |
|
Transport to the mill should be done in well ventilated crates
as plastic or fabric sacs prevent breathing and then encourage
moulds on the olives. |
|
Pick olives directly from the tree, either manually or mechanically
and never from the ground after storms or excess ripening.

|
Olives should be
crushed as soon as possible, preferably within 24 hours from
picking. |
