Use only well grown healthy olives, obtained by young trees planted in well drained, parasite free olive groves
Use olives picked at the optimum ripening stage as this is the time when their fragrance is at their best. Discard over ripe olives.
In the presence of a favourable climate, in those regions naturally suited to olive growing.
Transport to the mill should be done in well ventilated crates as plastic or fabric sacs prevent breathing and then encourage moulds on the olives.
Pick olives directly from the tree, either manually or mechanically and never from the ground after storms or excess ripening.
Olives should be crushed as soon as possible, preferably within 24 hours from picking.
