| Basil
Sauce (Pesto)

Ingredients (makes 4-6 servings):
- 2 oz. Fresh basil leaves
- Garlic - 3 cloves, crushed
- 2 oz. Pine nuts
- 4 fl. oz. Originale
Extra Virgin Olive Oil
- 2 oz. Parmesan cheese freshly
grated
- pinch of salt

Preparation
Put the basil, garlic, pine nuts and
extra virgin olive oil into a blender or food
processor and blend until the mixture resembles
a paste. Add gently the parmesan and stir well.
Put the sauce in a food storage container and
cover with oil. Place the container into refrigerator
until ready to use.
To use over pasta (better if Eggs Tagliatelle).
Put the sauce in a bowl. Cook pasta in a deep
pan with salted water. While the pasta is cooking
take off an 1/2 cup of boiling water and add to
the sauce. Stir.
Cook pasta al dente and dry it. Add pasta to the
sauce. Stir and add Parmesan Cheese. Serve hot.
