Ingredients
(makes 2 servings):
4 loin chops or 2 arm chops
1 tsp McCormicks All-Purpose seasoning
1 tbp Monini EVOO, maybe a bit more
finely crushed pepper

Preparation
Heat oven to 375
Over med/med-high heat brown lamb in oven proof
fry pan for about 2 minutes, flip and cook for
about 30 seconds
Send lamb with pan to oven for about 6 minutes
for still nice and pink/juicy and 8 minutes for
a little pink on the inside.
Lamb generally gives up its juices at about this
time and the Monini EVOO helps cook it as a red
eye and traps the flavors.
You won't need much other than a good glass of
wine.
Serve with baby reds parboiled and Monini fried
in another pan and garnish with parsley, sea salt
and finely crushed pepper. Asparagus when in season
brushed with EVOO and grilled in a grill pan for
about 6-8 minutes. Turn a couple of times. Did
I mention wine? Pinot Noir is perfecto.
