Ingredients (makes 12 servings):
- 1/4 cup Monini Basil-Flavored
Extra Virgin olive oil
- Grated peel and juice of 1 large
lemon,
plus second lemon cut into 12 thin
wedges
- 6 cloves garlic, roasted
- 12 large shrimp, shelled and deveined,
tails left intact, about 12 ounces
- 1/4 cup chopped fresh parsley,
plus whole leaves for garnish, optional

Preparation
One hour before serving, soak 12, 8-inch
wooden skewers in cold water. Just before serving,
heat broiler.
In medium-size bowl using fork or wire whisk,
beat together oil, lemon peel, lemon juice, and
roasted garlic. Remove 2 tablespoons marinade
to small bowl; set aside. Place shrimp in medium-size
bowl, tossing in marinade to coat.
On each skewer, thread lemon wedge and shrimp.
Broil, 5 inches from heat source, 3 to 4 minutes,
turning once. Brush with reserved marinade; place
on serving platter and sprinkle with chopped parsley.
Garnish with whole parsley leaves, if desired.
