Chicken with Lemon and Artichoke & Olive Paste



Ingredients (makes 6-8 servings):

  • 1 whole chicken
  • 1 jar of Monini Artichoke with Olives Paté
  • 3-4 lemons
  • 1/3 cup of Monini Extra Virgin Olive Oil
  • 1 cup of chicken broth

Preparation

Spread ½ jar of the Artichoke Patè with Olives inside the chicken. With a fork, pierce the lemons and put them inside the chicken.

Spread the rest of the Patè over the chicken.

In a covered saucepan place the Monini Extra Virgin Olive Oil, the chicken, the broth and cook. Add a little water every now and then, to prevent the chicken from becoming too dry.

Serve hot.
