A
typical salad can be made extraordinary
with the addition of edible flowers
and gently warmed goat cheese crostini.
Nasturtiums come in vivid orange,
red and yellow hues and contain a
form of mustard oil that gives them
a peppery flavor. They can be found
at gourmet stores or by placing a
special order with your regular grocer's
produce department. Keep them chilled
until ready to serve.
Ingredients (makes 6 servings):
- 8 ounces goat cheese
- 1 lb arugula leaves
- 3 tbsp Extra Virgin Olive Oil
(we suggest Fruttato)
- 2 tbsp baslamic vinegar
- salt and pepper
- 12 slices of bread
- 1 tbsp fresh thyme

Preparation
Preheat oven to 350° F.
Prepare the Vinagrette with Oil, salt, pepper
and Balsamic Vinegar. Pour the vinagrette over
the salad and portion the salad in half of each
serving plate.
Spread the Goat Cheese on the bread slices and
bake them for about 15 minutes. Remove from oven
and place two slices in the empty half of each
serving plate . Spread over each slice a small
quantity of fresh thyme.
Place two different colors of Nastrurtiums on
the salad and serve immediately.
