Risotto

Ingredients (makes 4 servings):
- 17 oz (1LB) of rice

- ½ jar of Monini
Green Olive Paste
- 2 stalks of celery, minced
- 2 leeks minced
- 1 small carrot, minced
- a handful of spinach, chopped
- 1 tablespoon of chopped parsley
- ½ glass of Monini Originale
Extra Virgin Olive Oil
- boiling-hot vegetable broth
- salt

Preparation
Sautè all the vegetables in 1
tablespoon of Monini Extra Virgin Olive Oil thinned
with a cup of water. Add the rice and stir constantly,
adding the boiling broth a little at a time until
the rice is done. Stir in the Green Olive Paste
and remaining oil, and serve.
