Green Risotto
 


Ingredients (makes 4 servings):

  • 17 oz (1LB) of rice
  • ½ jar of Monini Green Olive Paste
  • 2 stalks of celery, minced
  • 2 leeks minced
  • 1 small carrot, minced
  • a handful of spinach, chopped
  • 1 tablespoon of chopped parsley
  • ½ glass of Monini Originale Extra Virgin Olive Oil
  • boiling-hot vegetable broth
  • salt

Preparation

Sautè all the vegetables in 1 tablespoon of Monini Extra Virgin Olive Oil thinned with a cup of water. Add the rice and stir constantly, adding the boiling broth a little at a time until the rice is done. Stir in the Green Olive Paste and remaining oil, and serve.
