Bruschetta al Pomodoro

Ingredients (makes 2 servings):

  • 1 loaf Italian bread sliced in two
  • 4 ripe tomatoes, diced and seeded
  • 3 whole garlic cloves crushed
  • 4 tablespoons Monini Extra Virgin Olive Oil
  • ½ cup chopped fresh basil leaves
  • salt and black pepper, to taste
 

Preparation

Toss tomatoes with basil. Broil bread until brown. Rub garlic on warm bread. Top bread with tomato mixture.
Drizzle with Monini Extra Virgin Olive Oil.
